Din Tai Fung Style Pork Chops

I am so lucky to have lived by many Din Tai Fung locations in California over the last couple of decades. I was introduced to the very first location by my very first boss and have loved it since. It always hits the spot! I’m a fan a good pork chop so instead of ordering for delivery like we typically do, I wanted to try to mimic theirs tonight (which usually comes on top of fried rice). Chef’s kiss💋I’ll probably tenderize it a bit more so it’s even thinner next time.

Recipe

Ingredients (3 Servings)

3 BONELESS PORK LOIN CHOPS
2 TBSP SOY SAUCE
1 TBSP MIRIN/SHAOXING WINE
1 TSP SALT
1 TBSP SUGAR
1 TSP CORN STARCH
1 TBSP RICE FLOUR
1/4 TSP WHITE PEPPER

Instructions

Cut slits around the fatty area of chop. Tenderize meat until about half the thickness (1/4 inch).

Mix all ingredients together in a bowl except for pork. Pour mixture into a ziplock bag and rub pork well. Marinate on counter for 1 hour.

Add enough vegetable oil to a wok/pan to cover chops. Fry no more than two at a time for 4 minutes each, flipping halfway through. Allow to rest for 5 minutes before slicing.
