Flame Broiler Chicken Veggie Bowls

 
 

The first Korean fast food chain I ever tried was @theflamebroiler in Fullerton, Ca (their first location). Their bowls are so flavorful and healthy, they’re even my go-to meal when I’m looking for something quick if I’m on a diet.

The Chicken Veggie Bowl with brown rice, extra green onions and a ton of hot sauce is my typical order. I meal prepped this before heading out on my work trip earlier this week and it’s a perfect weekday dinner for the family. Just about 10 minutes to put together and keeps really well!

Ingredients (4 Servings)

1 LB CHICKEN THIGH
2 CUPS BROCCOLI FLORETS
1 CUP CABBAGE, CUT IN LARGE CHUNKS
1 CUP CARROTS, SLICED
SALT
PEPPER
EVOO
GREEN ONIONS, SLICED
—Sauce
1/4 CUP SOY SAUCE
1 CUP WATER, DIVIDED
1/2 TSP GINGER, MINCED
1 TSP GARLIC, MINCED
5 TBSP BROWN SUGAR
2 TBSP HONEY
2 TBSP CORNSTARCH

Instructions

Steam broccoli, carrot and cabbage together with salted water until cooked (don’t over steam, make sure they still have a bite). Set aside.

Add salt and pepper to chicken thighs and brown on a pan in oil until cooked through. About 3 minutes each side. Chop into large bite size pieces and place in a bowl.

Mix half the water with cornstarch in a bowl. In another bowl combine remaining water and the rest of ingredients in the sauce. Mix well. Add everything to a pan and cook until thickened.

Pour sauce over chicken and toss to coat. Serve over rice and veggies. Sprinkle with green onions.
