Stir-Fried Pasta (Nui Xào)

I have a lot of cousins and we spent the better part of our childhoods together. Grandma and the aunties would make a big batch of this pasta when we were kids for lunch. The ham and olives are definitely a family touch. I’ve seen more typical versions served with beef, but I’ve never had it that way. Our family used macaroni noodles too, but I switched it up with a penne shape (any shape works). 

Also, rice pasta is not very easy to come by so I’m glad I discovered Bolsa Buy that shipped directly to my house! Otherwise, good old fashioned macaroni pasta does just fine.

Recipe

Ingredients

1 LB RICE MACARONI (OR REGULAR MACARONI)
1 CUP HAM STEAK, CUT IN SMALL CUBES
3 OZ TOMATO PASTE
1/2 CUP SLICED BLACK OLIVES
1/2 YELLOW ONION, MINCED
6 GARLIC CLOVES, MINCED
1/2 TBSP SUGAR
1 TBSP OF MAGGI
2 TBSP EVOO

Instructions

Cook pasta according to instructions. Drain and set aside. 

In a large pan, add oil and sauté onion and garlic for a few minutes  Add ham and olives and cook for another few minutes stirring frequently. Add tomato paste, sugar and Maggi and mix well for a few additional minutes.

Add the pasta and mix to combine. Add additional Maggi if desired.
