Baked Pork Ribs

I made these lazy ribs over the weekend. I call them lazy because it's great for when you want to eat BBQ without having to BBQ. I often cook in small batches because it's just my husband and daughter at home so when I still want to make fancy meals, minimal effort is key.

Recipe

Ingredients (2-3 Servings)

2 LB PORK RIBS, PRE-CUT
SALT
PEPPER
โ€”Sauce
1 TBSP EVOO
1/4 ONION, FINELY DICED
1/4 CUP KETCHUP
1 TBSP SRIRACHA (or hot sauce of choice)
1 TBSP BROWN SUGAR
1/2 TBSP APPLE CIDER VINEGAR
CUMIN
GARLIC POWDER

Instructions

I purchased pre-cut spare ribs to reduce the amount of effort in prep and post work. Just season generously on both sides with salt and pepper and place them in the oven covered with foil at 275 degrees for 3 hours. Flip them halfway through.

Note: I'm using my toaster oven again. Another hack when I don't want to mess with my big one. Toaster ovens tend to get hotter due to the compact space, so if you're using your regular oven, you may need to adjust time accordingly.

While waiting, prep the sauce. Saute onions in a pan until translucent. Add a pinch of cumin and garlic powder then stir to mix. Add ketchup, siracha, sugar and vinegar and heat until combined. Remove and set aside.
