Beef And Potato Stir Fry (Khoai Tây Xào Thịt Bò)

Whenever the smell of fried potatoes hit my nose when I was a kid, I knew what was for dinner. This is a super simple, super satisfying Vietnamese dish that can be whipped up in less than 30 minutes. And who doesn’t like meat and potatoes?

Ingredients (3 Servings)

2 MEDIUM IDAHO POTATOES
1/2 LB FILET MIGNON
1/2 YELLOW ONION, SLICED
2 TBSP OYSTER SAUCE
2 CLOVES GARLIC, MINCED
VEGETABLE OIL
SALT
PEPPER

Instructions

Peel and slice potatoes in half moon shapes. Soak them in a bowl of cold water while prepping next steps.

Slice the beef in 1/4 in. thin slices. Marinate with oyster sauce, a big pinch of pepper and garlic.

Fill a large pan halfway with oil. Heat until it’s ready to fry. Drain potatoes and pat dry with paper towel. Add to oil in an even layer. Fry until golden brown. Remove and place on paper towel. Season with salt.

Remove oil while leaving a couple tablespoons in pan. Add sliced onion and cook until translucent. Add beef and cook until browned (don’t overcook). Add in potatoes and toss until mixed well and turn off heat.

Serve with rice and a side of fish sauce, lime and sliced thai pepper dipping sauce if desired.
