Lemongrass Chicken (Gà Xào Sả Ớt)

This quick and easy Vietnamese chicken recipe is great for a rice bowl. It’s also great for those nights when you just can’t deal with anything complicated.

Ingredients (5-6 Servings)

4 TBSP FISH SAUCE
3 GARLIC CLOVES, MINCED
1 TBSP CURRY POWDER
3 TBSP SUGAR
2 LB BONELESS, SKINLESS CHICKEN THIGH
4 TBSP WATER
3 TBSP VEGETABLE OIL
2 STALKS LEMONGRASS, MINCED (BULB ONLY)
1 SHALLOT, SLICED (OR ONION)
3 THAI CHILIES, MINCED

Instructions

Combine 2 tbsp. fish sauce, garlic, curry powder and mix with chicken (cut in bite sizes) in a bowl. Prep lemongrass, shallots and chilis.

Stir fry shallots and lemongrass in oil until fragrant in a wok. Add in chicken and cook through. Set aside in a bowl.

In the same wok add sugar, water, remaining fish sauce and cook until bubbling and thickened. Add chicken back in with chilis and coat until liquid is coated.

Serve with rice and sliced tomatoes and cucumbers.
