I've been spoiled having lived in Koreatown/Downtown LA the majority of my 20s so I know a legit taco when I see one. They're harder to come by in the South Bay, so when the cravings hit on a weeknight, I try to whip up my own.

Recipe

Ingredients (12 Tacos)

JUICE FROM ONE BLOOD ORANGE (or OJ)
2 TBSP OLIVE OIL
JUICE FROM ONE LEMON
1 TBSP GROUND CORIANDER
1 TBSP SALT
2 TSP PAPRIKA
2 TSP DRIED OREGANO
1 TSP GARLIC POWDER
1 TSP BLACK PEPPER
1 TSP GROUND CUMIN
1.5 LB SKINLESS CHICKEN THIGHS

—Toppings
DICED ONION
CHOPPED CILANTRO
SLICED RADISH
SLICED JALAPEÑOS

Instructions

I did this step in the morning before heading to work: Combine all the ingredients except chicken and toppings in a bowl and mix well. Put the chicken in a ziplock bag and pour in the mixture, massage well and leave in the refrigerator to marinate until you get home.

When you get home, just grill the chicken until cooked through and sliced the meat in thin strips. Prep the toppings while you wait!
