Purple Multigrain Rice (Japgokbap)

This is my simplified take on this healthy Korean rice. We have it at least once a week and it makes plain white rice a more nutritious option I can feel good about feeding my family.

Recipe

Ingredients (6 Servings)

3 CUPS MEDIUM GRAIN JAPANESE RICE
1 TBSP BLACK RICE
2 TBSP FARRO
1/2 CUP MIXED BEANS

You can add/substitute the above with anything, from sweet rice, brown rice, millet, etc.

Instructions

Soak beans in water for an hour (it’s a time saver to soak a large batch then drain and freeze in a zip lock for later use).

Combine all ingredients in rice pot and wash until the water runs clear. Add about 1/2 inch of water above the rice surface. We have a @cuckoo_america Korean rice cooker so I just set it to β€œMixed” and press start. Otherwise, cook rice accordingly.

Once the rice is done, mix it up and serve.
