Shrimp Scampi

When you're craving a vacation and all you can do is transport yourself through food. Really missing Hawaii these days so I made a wannabe version of Giovanni's Shrimp Truck specialty. Fair warning: it's not for dieters.

Recipe

Ingredients (4 Servings)

1 LB LARGE SHRIMP (shell on)
1/2 CUP BUTTER
1/4 CUP EVOO
1/3 CUP GARLIC, MINCED
3/4 CUP FLOUR
2 TBSP PAPRIKA
1 TSP CAYENNE
SALT
2 LEMONS

Instructions

Mix flour, paprika and cayenne pepper in a large bowl. Toss shrimp to coat.

Add oil, butter and garlic to a pan and cook for a few minutes until garlic begins to soften.

Add shrimp in a layer (divide if needed), sprinkle some salt and cook for a few minutes. Flip, sprinkle salt again and squeeze juice of a full lemon and cook for a few more minutes.

Serve with rice, lemon wedges and pour butter and garlic from the pan all over.
