Spam Musubi

I had some leftover spam so I made breakfast musubi. It uses mostly ingredients in your pantry for the perfect snack to transport you to Hawaii.

Recipe

Ingredients (2 Musubi)

1 SHEET DRIED SEAWEED (sushi nori)
1 CUP COOKED RICE
1/4 CAN OF SPAM, SLICED IN 2 QUARTER INCH PIECES
2 EGGS
2 SLICES KRAFT SINGLES
SALT
OIL
β€”Marinade
3 TBSP RICE VINEGAR
1/8 CUP SOY SAUCE
1/8 CUP OYSTER SAUCE
1/4 CUP SUGAR

Instructions

NOTE: You will need a musubi maker.

Combine marinade in a resealable container and drop in sliced spam for 5 minutes. You can save and reuse this marinade if desired. Slice nori in 3-4 inch strips while waiting.

Drizzle a little oil in a pan and cook on both sides. Add folded cheese slices on top to melt. Set aside.

Scramble egg in a bowl and drizzle oil in the same cleaned pan. Add egg and cook in a thin layer, flipping before it overcooks. Sprinkle with salt.

Remove and cut egg with musubi maker in two pieces. Add half the cooked rice in the musubi maker and press down.

Add egg on top of rice, then spam (cheese side down), and wrap with nori. Repeat!
