Ground Pork with Cucumber (Thịt Bằm Dưa Leo)

I had a surplus of ground pork so I made this nostalgic Vietnamese meal that I haven't had since my childhood. It's budget-friendly, low maintenance and tasty. My daughter cleaned her bowl!

Recipe

Ingredients (3 Servings)

2 TBSP OIL
1 LB GROUND PORK
1/2 ONION, DICED
2 TSP GINGER, MINCED
2 GARLIC CLOVES, MINCED
5 TBSP BROWN SUGAR
2 TBSP FISH SAUCE
CUCUMBER, SLICED

Instructions

Add oil to a pan and the onion, ginger, garlic and cook for a couple minutes.

Add the pork and cook until no longer red while breaking up the meat.

Add sugar and fish sauce and cook on high for 10 minutes while stirring the meat every 2 minutes to allow for caramelization.

Serve on a bed of rice and sliced cucumbers. To eat, I like to mix everything together to balance out the sweet meat with the neutral rice and crunchy cucumbers.
