Antioxidant Salad

We had a batch of kale from the yard so I decided to make some nourishing salad because maintaining a healthy immune system is important to all of us right now.

Recipe

Ingredients (2 Servings)

—Fish
1 LB SALMON FILLET
@traderjoes ONION SALT
TUSCANY BLEND DRY HERBS
1 TBSP EVOO
CRACKED BLACK PEPPER

—Salad
KALE
CHERRY TOMATOES, HALVED
BLUEBERRIES
GOAT CHEESE
ROASTED PEPITA SEEDS
RED ONION, SLICED
AVOCADO
2 BOILED EGGS (OPTIONAL)
EVOO
SALT
CRACKED BLACK PEPPER

Listed below are other ingredients rich in antioxidants you can use:

FISH: sardines, herring, mackerel, anchovies
GREENS: spinach
FRUIT: any berries or purple grapes
SEEDS: sunflower, chia, flax
VEGETABLES: beets, sweet potato, butternut squash

Instructions

Top salmon with EVOO, onion salt, dry herbs and pepper. Bake in over at 450 degrees for 15 minutes.

While fish is baking, rip kale into bite size pieces by hand. Drizzle EVOO, some salt and pepper and massage the leaves by hand.

Add desired toppings, cooked salmon and serve with a vinegrette and some hot ginger or green tea for another healthy boost.
