Potato Pancake (Gamjajeon)

When we harvested our first crop of potatoes, I wanted to make a dish where we can really enjoy them in all their glory. Best of all? This Korean dish uses less than 5 ingredients and takes no more than 20 minutes to whip up. Great as an appetizer or a side dish.

Recipe

Ingredients (1 Large Pancake)

1 LARGE POTATO, PEELED
1/2 ONION, PEELED
1/4 TSP SALT
1/4 CUP CORN STARCH
VEGETABLE OIL
—Dipping sauce
2 TBSP SOY SAUCE
1 TBSP VINEGAR
1 TSP SUGAR
1/2 JALAPEÑO, SLICED

Instructions

Grate potato and onion in a bowl and add corn starch and salt. Mix well until combined.

Heat a large pan with a generous amount of oil to coat until hot. Add potato mixture in a thin layer. Fry until golden brown, flip and repeat. Enjoy with dipping sauce!
